MIXED VEGETABLE CURRY RECIPE 2023

Vegetables can be processed in many ways like beak, roast, cook and grill and make different dishes like graves, curries and salads. So we are going to make a mixed vegetable curry recipe with multiple vegetables.

REQUIRED ITEMS FOR MIXED VEGETABLE CURRY RECIPE
- Roughly sliced Onion ( 1 )
- Groundnut Oil or Butter ( 1 tablespoon )
- Cumin seeds ( 1 tablespoon )
- Chopped Garlic ( 1 tablespoon )
- Salt ( 1 tablespoon )
- Sliced Tomato ( 1 )
- Red chilly powder ( 1 tablespoon )
- Turmeric powder ( 1/2 tablespoon )
- Toasted Coriander powder ( 1 tablespoon )
- Water
- Chopped vegetable mix ( Carrot, Beans, Cauliflower, Capsicum and Cucumber ) ( 1 cup )
- Cashew powder ( 1 tablespoon ) (optional )
- Cube shape cut cottage Cheese ( 1/4 cup )
- Chopped Coriander leaves ( 1 tablespoon )
- Garam masala powder ( 1/2 tablespoon )
PROCESS OF MAKING MIXED VEGETABLE CURRY RECIPE
- First take a medium pan and heat the pan on a medium flame add Groundnut Oil or Butter ( 1 tablespoon ), Cumin seeds ( 1 tablespoon ), Roughly sliced Onion ( 1 ) and Chopped Garlic ( 1 tablespoon ) Now mix this well then allow these mixtures cook to 2 to 3 minutes to get a little bit of golden colour. To hassle this process we will add Salt ( 1 tablespoon ) and leave this mixture on low flame for 2 to 3 minutes more.
- Next as the Onions have cooked well we are going to add Sliced Tomato ( 1 ) to the above mixture and then stir for 2 to 4 minutes we also need to smash tomato pieces to bust juices from those this will help us to make a liquid solution.
- Now we will add Red chilly powder ( 1 tablespoon ), Turmeric powder ( 1/2 tablespoon ), and Coasted Coriander powder ( 1 tablespoon )to the above mixture and mix all this then add Water ( 1/4 cup ) increase the flame and allow the mixture to cook well. Once it is cooked well just smash the mixture with a potato smasher nice and mushy. This process will help mix all the spices well.
- We are now going to add Chopped assorted vegetable mix ( Carrot, Beans, Cauliflower, Capsicum and Cucumber ) ( 1 cup ) to the mixture and start mixing it well. Again add Water ( 1/4 cup ) then allow this mixture to cook by closing the pan cover led.
- Duration of the vegetable must be 13 to 15 minutes or till the vegetables are cooked well. To make this vegetable curry we need to add Cashew powder or paste( 1 tablespoon ), Cube shape cut cottage Cheese ( 1/4 cup ), Chopped Coriander leaves ( 1 tablespoon ) and Garam masala powder ( 1/2 tablespoon ) now start stirring it 3 to 4 minutes. Then turn off the flame.
- There it is our mixed vegetable curry recipe is ready we can have long with chapatis or kichadi.
PRECAUTIONS AND SUGGESTIONS WHILE MAKING MIXED VEGETABLE CURRY RECIPE
- We can make this mixed vegetable curry using other vegetables also like Potato, Zucchini and Broccoli.
- We can use Butter or Clarified butter.
- Vegetables we are using for this dish must be fresh for better results.
- Salt can be used at our convenience.
- We can use Tomato puree instead of Tomatoes.
- Don’t overcook the vegetable mixture it will burn the dish and leave a bad smell.
- We can use any seeds of Oil instead of Groundnut Oil.
