MILLET BREAD RECIPE 2024 | MILET SPECIAL DISH

Hi, friends welcome to hindustannews. site today we are going to discuss another yummy recipe that is Foxtail millet bread recipe. This recipe is gluten-free and vegetarian-friendly. Millets are a good source of dietary protein, vitamin B, phosphorus and some minerals. Recent studies have shown that millet helps in controlling and managing blood sugar levels.

The Millet bread  recipe consists following nutrients  in a single slice

  • Carbohydrates:  12 g
  • Proteins : 3 g
  • Energy: 85 calories

 

REQUIRED ITEMS FOR MILLET BREAD RECIPE

  • Foxtail millets ( 1 cup )
  • Edible Gum ( Gond ) ( 2 tablespoons )
  • Water
  • Raw Honey ( 1 tablespoon )
  • Dry yeast ( 1/4 tablespoon )
  • Coconut Oil ( 2 tablespoons )
  • Coarsely ground foxtail millet ( 1 cup )
  • Foxtail millet flour( 1 Cup )
  • Ground flaxseeds ( 1/4 cup )
  • Salt ( 1 tablespoon )
  • Mixed spices ( 1 tablespoon )
  • Sesame seeds ( 1 tablespoon )

PROCESS OF MAKING MILLET BREAD RECIPE

  • Take medium size bowl then add Foxtail millets ( 1 cup ) and Water ( 2 cups ) leave this mixture for 6 to 8 hours to millets soak the water.

  • Following the next step we will take Edible Gum ( Gond ) ( 2 tablespoons ) and Water ( 1/4 cup ) leave this mixture to soak in water for a minimum of 4 to 5 hours.

  • After soaking Foxtail millets ( 1 cup ) for 6 to 8 hours we need to sun dry the millets for 1 day and roast in a medium-sized pan for 8 to 10 minutes on a medium flame.
  • Once millets were dry roasted well on medium flame we needed to turn off the gas flame and then leave the millets for 5 minutes to cool down. After this, we need to grind it into a mixer.

  • We need to add some warm Water ( 1/2 cup ) to the ground millet mixture.
  • Take a medium-sized bowl then add warm Water ( 1/2 cup ) and dissolve Raw Honey ( 1 tablespoon ). Add active Dry yeast ( 1/4 tablespoon ) and let it proof for 7 to 8 minutes.

  • As the yeast has proofed nicely. The Gond has melted completely in the main while adding the soaked Gond to the yeast mix and adding Water ( 1/2 cup ) to mix everything well. Now add Coconut Oil ( 2 tablespoons ), Ground foxtail millet ( 1 cup ), Foxtail millet flour ( 1/3 cup ), Ground flaxseeds ( 1/4 cup ) and Salt ( 1 tablespoon ) combine everything.

  • To combine everything we can use an electric dough kneader. Cover it and let it rest for 20 to 30 minutes. Now add Foxtail millet flour( 1/2 cup ) and mix Then add Mixed spices ( 1 tablespoon ) of your choice and mix again one more time. Cover again and let it rest for 30 to 40 minutes or until it doubles in size.

  • Once the dough has risen nicely, sprinkle some foxtail millet flour and mix with the dough. Transfer the dough to a greased bread tin then spread the dough evenly sprinkle Sesame seeds ( 1 tablespoon ) on the top.
  • Let dough rest for second proofing up to 20 to 30 minutes. Now bake this mixture in an oven at 160 degrees Celsius for 40 to  50 minutes. Our Millet bread is ready.

  • Let it cool down the millet bread completely before demolding.

PRECAUTIONS AND SUGGESTIONS WHILE MAKING RECIPE

  • Instead of using soaked Foxtail millets we can also try germinated Foxtail millets for good results.
  • The substitute of Gum ( Gond ) can be used like psyllium husk arrowroot powder potato starch or eggs.
  • To rapidly melt Gum into powder we can use the grinder and soak the powder in hot water for 20 to 30 minutes.
  • Dry roasting will help remove moisture and grinding of foxtail millets.
  • We have used only one type of foxtail millet in the above recipe we can use other millets also like Coarsely ground foxtail millet and Finely ground foxtail millet.
  • To produce sweet millet bread we can use rock sugar instead of Raw honey while making millet bread recipe.
  • We can add butter or groundnut oil instead of Coconut oil while making a millet mixture.
  • To mix the millet bread mixture we can use a spatula or hands to substitute of electric dough kneader.
